Macadamia Coconut Crusted Chicken

Oven "Fried" Chicken With A Twist




Ingredients:



1 serving size container greek yogurt, plain
1/2 Tablespoon honey
5 ounce package NutCrusters Macadamia
  Coconut blend
salt and freshly ground black pepper, to taste
1/2 pound boneless, skinless chicken breast 
  cutlets


Directions:

Preheat oven to 400 degrees.  Line baking sheet with parchment paper.

Mix yogurt and honey together in a shallow dish.  Combine NutCrusters, salt, and black pepper on a plate.  Dip chicken in yogurt, covering both sides.  Dredge coated chicken in NutCrusters, covering both sides and lightly pressing coating into chicken.  Place on baking sheet and bake 17 to 20 minutes, turning once.


Variation - Good Appetizer Or Dinner

Macadamia Coconut Chicken Fingers
Cut chicken cutlets into 1 1/2 to 2 inch strips.  Coat in yogurt and NutCrusters as above.  Bake 15 to 20 minutes, turning once.

Serves 2
