Black Beans and Rice

Ultimate Comfort Food!


Ingredients:


1/2 cup rice
1/2 Tablespoon olive oil
1/2 small onion, chopped*
1/2 bell pepper, chopped*
1 teaspoon garlic, minced
kosher salt and freshly ground black pepper
1/2 teaspoon ground cumin
1 15 1/2 ounce can black beans, rinsed
1/2 teaspoon oregano
1/2 cup water
1/2 Tablespoon red wine vinegar
1/8 cup fresh cilantro, chopped or 1 tablespoon Gourmet Garden
 fresh blends cilantro



Directions:


Cook the rice in rice cooker according to the manufacturer's directions.

Heat the oil in a saucepan or large skillet over medium-high heat.  Add onion, bell pepper, garlic, salt, and pepper and cook, stirring occasionally, until softened, 5 to 7 minutes.  Stir in the cumin and cook for 1 minute.
Add the beans, oregano, and water. Simmer, covered, for 10 minutes.
Smash some of the beans with the back of a fork to thicken. Add the vinegar and stir in cilantro.  Serve over the rice. 



*frozen chopped onion and frozen chopped pepper may be substituted for fresh 

Serves 2 to 3
