Breakfast Cookies

A Little Fruit, A Little Oats, What Could Be Bad?

Ingredients:

3 ripe bananas, mashed
1/6 cup applesauce
1 to 1 1/2 cup quick cooking oats
1/8 cup milk
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon sugar
1/2 cup dried fruit (rasins, 
 cherries, mango, whatever
 you like)
1/4 cup chopped nuts
1/4 cup chopped chocolate
 or chocolate chips

Directions:

Preheat oven to 350 degrees.  Spray baking sheet with cooking spray.  Put all ingredients in a bowl and mix well.  Let the mixture stand for 10 to 15 minutes until the oats are hydrated and the mixture forms a moist dough.  Put heaping teaspoonfuls of cookie dough on baking sheet.  Bake 10 minutes.  Remove from oven and gently flatten each cookie with the greased bottom of a glass.  Return to oven and bake an additional 3 to 5 minutes.  Cool and store in an airtight container.  Makes about 20 cookies - 4 cookies per serving.
