Vegetarian Bean Burgers

Easy and Delicious! 


Ingredients

  • 2 cups cooked or (drained) canned white, black, or red beans - or a mixture
  • 1 medium onion cut into chunks
  • 1/2 cup rolled oats - or more as needed
  • 1 Tablespoon chili powder - or less to taste
  • Salt and freshly ground black pepper
  • Reserved bean cooking liquid or water as needed
  • 2 Tablespoons olive oil plus more as needed
  • 4 hamburger buns or 8 slider buns or dinner rolls


Garnishes

French's original or cheddar fried onions
mustard, mayonaise, ketchup, guacamole, and/or salsa
pickles, jalapenos, onions and tomatoes

Directions

Line a baking sheet with parchment or wax paper.  Reserve 1/2 cup of beans.  Put remaining beans, onion, oats, and chili powder in a food processor with a sprinkle of salt and pepper.  Run processor about one minute until mixture is combined but not pureed.  Crush reserved beans and gently mix into mixture.  
Let the mixture sit in the food processor about 5 minutes.  Check consistency of the bean mixture.  You want a moist consistency that will easily form cakes.  If the bean mixture is too wet, add additional oats 1 Tablespoon at a time.  Pulse food processor to mix.  Allow to sit for an additional 5 minutes.  If the bean mixture is too dry, add bean liquid or water 1 Tablespoon at a time.  Pulse to mix and allow to rest for an additional 5 mnutes.
Shape the bean mixture into 4 large or 8 small patties.  Allow them to rest on the lined baking sheet for an additional 5 minutes.
Put the oil in a large skillet over medium heat.  When the oil is hot, add burgers.  Cook, undisturbed, until brown and crisp on one side - approximately 3 to 8 minutes.  Add more oil if necessary and carefully turn burgers.  Cook an additional 3 to 5 minutes until patties are browned and feel firm.  Place on buns and garnish as desired. Serve with Sweet Potato Fries and raw veggies.
