Pasta Frittata

Great For Using Up Leftovers!



Ingredients


  • 4 ounces cooked pasta - leftover Egg
  •   and Parmesan Pasta works well
  • 3 large eggs 
  • 1/4 cup chopped parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • pinch cayenne pepper
  • 1/4 teaspoon onion powder
  • 3 Tablespoons olive oil
  • 1/2 cup grated parmesan cheese


  • Directions

Whisk together the eggs, 1/8 cup parsley, salt, black pepper, cayenne pepper, and onion powder in a small bowl.  Heat the oil in large ovenproof skillet over medium-high heat. Add pasta and toss until warmed through (about 4 minutes.) Pour egg mixture over pasta.  Do not stir. Reduce heat to medium-low. Cook until eggs start to firm up and bottom begins to brown, lifting sides occasionally to let uncooked egg run underneath (about 8 minutes.) Remove skillet from heat. Sprinkle the frittata with parmesan cheese. Place under broiler and broil until the cheese melts, about 2 minutes.


Slide frittata onto plate.  Sprinkle with reserved parsley and cut into wedges.  Serve with toast and fruit.

Additions And Substitutions

Add other ingredients according to what is in your refrigerator: leftover meat or veggies, diced cold cuts, sausages or salami, cooked beans, salsa, etc work great.

  • - leftover sausage, ham, chicken, or beef,
  • - assorted veggies including mushrooms, peppers, onions, squash, etc.,
  • - mixed cheeses or cheese sauce

Serves 3 to 4
