Cheese Soup

Soup For Breakfast!


Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup water
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 ounces (approximately 1 1/2 cups) sliced Velveeta cheese
  • 1/2 cup shredded cheese or to taste
  • 1/2 teaspoon onion powder
  • 2 drops hot sauce - if desired
  • 6 to 8 slices buttered toasted bread

Directions

In a medium saucepan over low heat, melt the butter.  Stir in water, salt, and pepper. Add Velveeta slices and stir while melting to combine. Gradually add cheese, stirring constantly, until cheese melts and sauce is smooth; this will take 4 to 5 minutes. Add onion powder and hot sauce if desired. Pour over buttered toast and serve immediately.  Serves 4.  Quarter all ingredients to serve one.
